Veggie Focaccia Sandwiches Recipe:
Yield: 4 Sandwiches
Cook Time: 15 Min
Ingredients:
- Focaccia Bread, Cut into 4 Squares
- 2 Romaine Lettuce Leaves, Rinsed
- ¼ Cup Sun Dried Tomatoes
- ¼ Cup Red Onion, Sliced
- 1 Red Bell Pepper, Sliced
- Sriracha Aioli:
o ¼ Cup Mayonnaise or Veganise
o 1 tsp Sriracha
o 1 tsp Garlic Salt
- 1 Tbsp Butter or Ghee or Olive Oil
Directions:
1. Heat large skillet or griddle over medium-high heat. Cut focaccia squares in half (Like a sandwich/slider). Spread ghee, butter, or olive oil on each one.
2. Place on griddle and toast on each “inside” of the squares. Once golden brown, remove from heat and set aside.
3. Prepare sriracha aioli. Mix mayonnaise or veganaise, sriracha, and garlic salt.
4. Spread the aioli on each toasted side of the squares.
5. Starting with the bottom bread of the sandwich, layer the romaine, sundried tomatoes, red onion, and bell pepper. Top with the focaccia bread tops, enjoy!
Tips/Tricks:
- Using a serrated knife or bread knife will help cut the focaccia with ease, any other knife might “tear” the bread.
