This is seriously my favorite soup recipe! One day I was feeling sick and I didn't have any energy to cook; my husband decided to make me some homemade soup to help and he created this amazing dish!
If you're feeling under the weather, this soup recipe is very simple to whip up quickly and you can double the batch if you know you're going to be feeling sick for awhile.
Homemade soups are the perfect nourishment when you are sick and this recipe contains a wonderful blend of carbohydrates, protein, and vegetables to get you back feeling 100% again!

Orzo 'Chicken' Noodle Soup Recipe:
Yield: 4 Servings
Cook Time: 20 Min
Ingredients:
- 2 Small Carrots, Diced
- 2 Celery Stalks, Diced
- ½ Yellow Onion, Diced
- 3 Tbsp Butter or Earth Balance
- 2 tsp Sea Salt
- 1 tsp Fresh Cracked Black Pepper
- 2 ½ tsp Garlic Powder
- 1 tsp White Pepper
- 4 Cups Vegetable Stock
- ½ Cup Orzo Pasta
- ¼ Cup Heavy Cream or Coconut Cream
- Garnish: Smoked Paprika, Cheddar Cheese, Green Onions or Chives
Directions:
1. First, gather all ingredients and measure out. Next, wash vegetables and dry them. Dice the carrots, celery, and onion and then set aside.
2. In a large stockpot, over medium high heat, add 3 Tbsp butter or earth balance and let melt. Add the diced carrots, celery, and onion to the stockpot and let cook for 5-6 minutes or until the carrots are “fork-tender”.
3. Add 2 tsp sea salt, 1 tsp fresh cracked black pepper, 2 ½ tsp garlic powder, 1 tsp white pepper, and 4 cups of vegetable stock.
4. Bring the vegetable stock to a boil, and then add ½ cup of orzo pasta and let cook for 7-8 minutes until almost al dente.
5. Add the heavy cream or coconut cream at the very end and let cook for no more than 2 minutes. Remove the soup from the heat and ladle into a soup bowl.
6. You can garnish the soup with smoked paprika, shredded cheddar cheese, and green onions or chives if you’d like! I hope you all enjoy :)
Tips/Tricks:
- If you aren’t vegan, you could substitute chicken stock or bone broth instead of vegetable stock for a boost of added nutrients, especially if you’re feeling sick!
- I recommend making a double batch of this because it’s seriously that yummy! :)
