Avocado Tostadas

Have you ever tried an Avocado Tostada?


These are a fun take on the traditional tostada usually paired with refried beans. I highly recommend giving these a try!


Pair with rice and beans for a balanced meal, enjoy! :)





Avocado Tostada Recipe:


Yield: 2 Servings

Cook Time: 10 Min


Ingredients:

- 4 Tostada Shells or Fried Tortillas

- 1 Avocado, Mashed

- ¼ Red Onion, Sliced

- 2 Garlic Cloves, Minced

- ¼ Cup Shredded Vegan White Cheddar or Monterey Jack

- ½ tsp Cumin

- 1 tsp Sea Salt

- 1 ½ tsp Pepper

- ¼ tsp Chili Powder

- 2 Chives for Garnish


Directions:

1. Prepare tortillas or shells. Take a cut avocado and mash the pulp into a medium sized bowl. Add the garlic cloves, cumin, sea salt, pepper, and chili powder and stir to combine.

2. Spread the avocado mash over the tortillas or shells. Top with sliced red onion, shredded cheese of choice, and chives, enjoy!


Tips/Tricks:

-This would be perfect for a quick dinner or lunch at home, pair with a side of beans and rice for a more filling meal.

-If frying your tortilla shells, try sprinkling a little salt over the top of them immediately after frying!
