Toasty Vegetarian Panini

Need a quick lunch idea? Welcome, THE PANINI! I love me a good panini, do you? You don't need a panini press to achieve these results, however if you have one, this is super simple and easy to whip these up in no time :)



Toasty Vegetarian Recipe:


Yield: 2 Servings

Cook Time: 10 Min


Ingredients:

- 4 Slices Sourdough Bread

- 1 Tbsp Butter or Earth Balance

- ½ Cup Arugula

- 2 Slices Gruyere Cheese

- 2 Slices Cheddar Cheese

- 1 Avocado, Sliced


Directions:

1. Gather all ingredients.

2. Spread butter or earth balance over one side on each slice of bread.

3. Place cheese slices, sliced avocado, and arugula on un-buttered slices of bread. Sandwich the bread slices together and set aside.

4. Preheat panini press or a skillet over the stove top.

5. Place sandwich inside press or on top of skillet and toast each side until golden-brown, enjoy!


Tips/Tricks:

-Try serving with a cup of tomato or minestrone soup for a well-rounded meal!

-You can substitute gruyere cheese with mozzarella or Monterey jack cheese if you’d like!
