Street Corn Avocado Toast

Brunch is my favorite meal of all-time, and this fun twist on avocado toast is on my go-to list! It's super quick to make and tastes great paired with a Bloody Mary or a mimosa! Pop some bread in the toaster and you'll have a yummy brunch whipped up together in no time, enjoy! :)



Street Corn Avocado Toast Recipe:


Yield: 2 Toasts

Cook Time: 5 Min


Ingredients:

- 2 Slices Whole Wheat Bread, Toasted

- 1 Ripe Avocado, Mashed

- ¼ Cup Frozen Corn, Thawed

- ¼ tsp Salt and 1/8 tsp Salt

- ¼ tsp Pepper and 1/8 tsp Pepper

- ¼ tsp Garlic Salt

- 2 Tbsp Cilantro, Chopped

- ½ tsp Smoked Paprika

- ¼ Cup Feta Cheese, Cojita Cheese, or Daiya

- 1/8 Cup Broccoli Sprouts


Directions:

1. First, toast bread in toaster or toaster oven.

2. Cut open avocado and scrape into a bowl. Mash using a fork and add ¼ tsp salt, ¼ tsp pepper, and garlic salt.

3. Spread avocado over toast. In another bowl, add corn, 1/8 tsp salt, 1/8 tsp pepper, and smoked paprika and mix together.

4. Next, sprinkle the corn, feta cheese, cilantro, and broccoli sprouts over the top.

5. Cut in half or leave whole, enjoy!


Tips/Tricks:

- I like to let the toast cool down before putting the avocado mash on the top.

- You can add a splash of lemon juice to the avocado mash if you’d like to keep the avocado from turning brown.
