Roasted Sweet Potatoes

Tired of boring baked potatoes? Try these roasted sweet potatoes 🍠 instead! Made with vegan sour cream, chives, and fried onions! You can pop these babies in the oven and you'll have dinner prepped in no time, I hope you enjoy! :)



Baked Sweet Potatoes Recipe:


Yield: 2 Servings

Cook Time: 50 Min


Ingredients:

- 2 Sweet Potatoes

- 2 Tbsp Earth Balance

- ½ tsp Salt

- ½ tsp Pepper

- ¼ Cup Soured Coconut Cream

- 2 Tbsp Chives

- Fried Onions, To Taste

- Tiny Pinch Red Pepper Flakes

- Agave or Maple Syrup Drizzle on Top


Directions:

1. Preheat oven to 400° F.

2. Wash and dry sweet potatoes. Prick the potatoes with a fork all over the entire outside. Wrap potatoes with foil.

3. Bake until fork-tender, about 35-45 minutes. (Sometimes more depending on potato size).

4. Let cool for a few minutes and slices potatoes open. Layer with earth balance, salt, pepper, coconut sour cream, chives, crispy fried onions, red pepper flakes, and maple syrup drizzle, enjoy!


Tips/Tricks:

- Running short on time? You can try baking the potatoes at 450°F for 25-30 minutes.

- You can also add tofu bacon, vegan cheese, or even chili!
