This Pumpkin & Thyme Fusilli Mac N Cheese is perfect for the fall season!
This can be made completely vegan or vegetarian, depending on your preference.

Fusilli Macaroni & Cheese Recipe:
Yield: 2 Servings
Cook Time: 30 Min
Ingredients:
- 1 1/2 Cups Fusili Pasta Noodles
- 2 tsp Sea Salt
- 1 tsp Olive Oil
- 2 Tbsp Whole Wheat Flour
- 2 Tbsp Butter or Earth Balance
- ¼ Cup Smoked Gouda Cheese / Vegan Alternative
- ¼ Cup Wisconsin Cheddar Cheese / Vegan Alternative
- ¼ Cup Colby Jack Cheese / Vegan Alternative
- ¼ Cup Garlic Jack Cheese / Vegan Alternative
- 2 Tbsp Barely Buzzed Cheese, Grated on Top as Garnish / Vegan Alternative
- 1 Tbsp Boursin Cheese, Dollop / Vegan Alternative
- ¼ Cup Roasted Canned Pumpkin or Fresh Roasted Pumpkin
- 2 Cups Heavy Cream or Coconut Cream
- 1 Tbsp Sea Salt
- 2 tsp Smoked Paprika
- 1 ½ Tbsp Butter or Earth Balance
- ¼ Cup Panko Breadcrumbs
- Fresh Thyme Sprigs, Garnish
Directions:
1. Preheat oven to 400°F. Gather all ingredients. Bring 4 cups of salted water to a boil in a medium-sized pot.
2. Next, add fusilli pasta noodles. Cook until al dente, about 6-7 minutes.
3. Drain water and toss pasta noodles with 1 tsp Olive Oil. Set aside oiled pasta in another bowl.
4. In the same pot, melt the 2 tbsp butter with whole wheat flour, then add the smoked gouda, Wisconsin cheddar, Colby jack cheese, and garlic jack cheese, let melt.
5. Next, add the roasted canned pumpkin, heavy cream, 1 tbsp sea salt, and 2 tsp smoked paprika. Cook for 2-3 minutes.
6. In a small bowl, melt 1 ½ Tbsp butter and add the panko breadcrumbs. Toss together to combine.
7. Combine the melted cheese sauce with the fusilli pasta noodles, place the mac n cheese in miniature cast iron skillets or a large cast iron skillet.
8. Top with panko breadcrumbs, boursin cheese dollop, and barely buzzed cheese grated over the top. Bake for 5 minutes in preheated oven, enjoy!
Tips/Tricks:
- You can substitute any of your favorite cheeses if you’d like!
- You can also bake the macaroni and cheese in a glass baking dish if you don’t own a cast iron skillet. Just be sure to grease the baking dish before baking.
