Loaded Nachos

These nachos are a great at-home version of restaurant-quality nachos! You can make them as a snack, appetizer, lunch, or even dinner! Everyone loves nachos and I guarantee that everyone will love these nachos even more!











Loaded Nachos Recipe:

Yield: 2 Servings

Cook Time: 10-15 Min

Ingredients:

- 1 Cup Refried Pinto or Black Beans

- 1 Tsp Paprika

- 1 Tbsp Chili Powder

- ½ tsp Salt & Pepper

- 2 ½ Cups Tortilla Chips (White, Blue, or Yellow Corn Chips)

- ½ Cup Shredded White Cheddar Cheese (*Vegan: Daiya Cheese or Cashew Cheese)

- 1/3 Cup Pico de Gallo

- ½ Cup Queso (*Vegan: Kimchi Queso or Cashew Cheese)

- Toppings for Nachos: Green Onions, Sour Cream (*Vegan: Cashew Sour Cream), Cilantro, or Extra Cheese/ Queso

Directions:

1. Heat refried beans in a small pot on medium heat. Add paprika, salt, pepper, chili powder to beans and stir. Heat until warmed.

2. Place chips on a sheet tray and top with shredded white cheddar cheese. Bake in an oven at 350F for five minutes or until cheese is melted.

3. While chips are in oven, melt queso in another pot or in the microwave until it is warmed.

4. Top Nachos with all ingredients and garnish with cilantro or green onions, enjoy!

Tips/Tricks:

- Place beans on the bottom of your plate or serving platter so chips don’t move around or fall off your plate.
