This recipe is perfect for a lazy-night dinner!
After a long day of work, the last thing I feel like doing is cooking for 1 hour! This recipe only takes about 10 minutes to execute and you'll be re-fueling your body after a grueling day in no time!
Avocados are packed with protein, vitamins, and healthy fats to keep you going throughout the week!
Guacamole "Egg Salad" Croissant Sandwiches Recipe:
Yield: 2 Servings
Cook Time: 10 Min
Ingredients:
- 2 Avocados, Mashed
- 1, 12oz Can Chickpea or Garbanzo Beans
- 1 ½ Cups Vegetable Stock
- 1 ½ tsp Smoked Paprika
- 2 Croissants, Toasted
- 1 Tbsp Butter or Earth Balance
- 2 Tbsp Mayonnaise or Vegenaise
- ¼ Red Onion, Diced
- 2 Garlic Cloves, Minced
- 2 tsp Sea Salt
- 1 tsp Fresh Cracked Black Pepper
- 2 Butter Leaf Lettuce Leaves, Washed
- 2 oz Dill Pickles, Minced (Optional)
Directions:
1. Rinse & drain chickpeas. Bring chickpeas to a boil with vegetable stock. Cook for 5 minutes. Drain ½ the stock and mash the remaining stock with chickpeas.
2. Add mashed avocados, paprika, diced red onion, garlic cloves, sea salt, black pepper, and dill pickles if you’d like to the chickpea mash.
3. Preheat a large skillet or flat top griddle. Slice croissants in half with a bread knife or serrated knife. Melt 1 tbsp butter in skillet and toast insides of croissants.
4. Spread mayonnaise on toasted bread and top with the chickpea avocado spread. Place butter leaf lettuce on the top of the spread and add dill pickles if you'd like, enjoy!
Tips/Tricks:
- Pair this simple meal with a quick soup mix if you’d like to have a full meal.
- You can also use white beans instead of chickpeas if you’re in a pinch :)
