This is a fairly simple salad to make that has really great, fresh Mediterranean flavors!
Lots of fresh veggies, a homemade vinaigrette, and crunchy delicate mixed greens- yum!
You can prepare this a few days ahead for work lunches (just be sure to leave the dressing on the side when preparing :))
This would also be a great salad to bring for holiday parties! For my vegans, I would substitute the feta with Daiya cheese crumbles for a great alternative.
You could also add a little Bragg's nutritional yeast powder for some extra nutrients and flavor, I hope you all enjoy!
Greek Salad w/ Homemade Balsamic Vinaigrette Recipe:
Yield: 2 Servings
Cook Time: 15 Min
Ingredients:
- 3 Cups Mixed Greens or Spring Mix
- 1 Small Red Onion, Thinly Sliced
- ½ Cup Cherry Tomatoes, Sliced in Half
- 2 Mini English Cucumbers or 1 Half English
Cucumber, Cut into Half Moons
- ½ Cup Feta Cheese Crumbles
- ¼ Cup Kalamata Olives
- ¼ Cup Pepperoncini
- 2 Fire Roasted Peppers, Thinly Sliced
- ¾ Cup Grapeseed Oil or Safflower Oil
- ¼ Cup Balsamic Vinegar
- 2 Tbsp Shallot, Minced
- 1 Tbsp Dijon Mustard
- 1 Tbsp Sea Salt
- 2 tsp Fresh Cracked Black Pepper
- Optional: Lemon, Sliced into Wedges
Directions:
1. Gather all the ingredients. Next, wash the mixed greens, cherry tomatoes, and mini English cucumbers, dry and set aside mixed greens.
2. Slice the red onion, cherry tomatoes, mini English cucumbers, fire roasted peppers, and mince the shallot.
3. Prepare the vinaigrette by adding the balsamic vinegar to a small bowl. Slowly whisk in the grapeseed or safflower oil into the vinegar. Add the shallot, Dijon mustard, sea salt, and black pepper.
4. Toss the mixed greens with the freshly prepared balsamic vinaigrette. Garnish the salad with sliced red onion, cherry tomatoes, English cucumbers, feta cheese, kalamata olives, pepperoncini, and fire roasted peppers.
Tips/Tricks:
- You can also squeeze some fresh lemon slices over the top for an extra twist, enjoy! :)
- Some fresh arugula or butter leaf lettuce would also be a great lettuce choice!
