Banana Pistachio Nut Waffles

Hello Banana Pistachio Nut Waffles! These were so delicious drizzled with caramel and maple syrup! I topped them with caramelized bananas and crushed pistachios, YUM!


I like to make a big breakfast every now and again and these made it on the menu. I hope you enjoy this recipe!





Banana Pistachio Nut Waffles:


Yield: 2 Servings, 6 Mini Waffles

Cook Time: 15 Min


Ingredients:

- 1 ½ Cups Whole Wheat Flour

- ½ Cup All Purpose Flour

- 1 ½ Cups Almond Milk

- 1 tsp Cinnamon

- 2 tsp Baking Soda

- 2 Tbsp Vegetable Oil

- ½ tsp Sea Salt

- 2 Tbsp Sugar

- 2 Tbsp Earth Balance or Butter

- 3 Tbsp Chopped Pistachios

- Optional: Maple Syrup, Caramel Drizzle

& Extra Sugar to Caramelize Bananas



Directions:

1. Gather all ingredients and mixing bowls. Add flours, cinnamon, baking soda, sea salt, and sugar in a large bowl.

2. In a small bowl, add the almond milk, vegetable oil, and melted earth balance together. Slowly whisk into the dry ingredients in the large bowl.

3. Preheat mini waffle iron or regular sized waffle iron. Bowl batter 1/3 Cup portions at a time for large waffles and about ¼ Cup portions for mini waffles.

4. Cook waffles until golden brown and remove from iron. Place on a cooling rack. When finished, top with chopped pistachios, maple syrup and caramelized bananas, enjoy! :)


Tips/Tricks:

-To caramelize bananas, peel banana, cut into half (lengthwise) then sprinkle sugar over the top. Using a kitchen torch, brulee the banana until its caramelized and golden brown.

-You can also make pancakes with this recipe if you really want to! :)
