Vegan Caesar Salad w/ Walnut Crumbles Recipe:
Yield: 2-4 Servings
Cook Time: 15 Min
Ingredients:
- 2 Cups Chopped Romaine
- ½ Cup Whole of Walnut Pieces
- 1 Tbsp Nutritional Yeast
- 2 tsp Sea Salt
- ½ Cup Veganaise
- 2 Garlic Cloves
- ¼ Nori Sheet
- Soy Sauce
- Dijon Mustard
- Black Pepper
- Vegetable Oil
- *Add water if needed to thin
Directions:
1. Preheat oven to 350F. On a sheet tray, roast walnuts for 5-6 minutes until fragrant. Remove from oven and let cool.
2. Wash, dry, and chop romaine lettuce. Set aside.
3. In a blender or food processor, add walnuts, sea salt, and nutritional yeast.
4. Pulse until walnuts resemble crumbles.
5. Remove and set aside. In the same blender, add the veganaise, garlic cloves, nori sheet, soy sauce, Dijon mustard, black pepper, vegetable oil, and water if needed. Blend until smooth.
6. To build salad, toss lettuce with dressing and sprinkle walnut crumbles over the top, enjoy!
Tips/Tricks:
- The nori sheet adds lots of dimension in this recipe, I only used ¼ of a sheet because the flavor is very potent!
