Homemade Toasted Gnocchi

Have you ever had gnocchi?? The first time I discovered gnocchi, I was ecstatic! I love everything about potatoes and this homemade recipe is very simple and deliciously easy to follow along! Pair with a plant-based cream sauce or marinara and you've got a fancy dinner you can enjoy from the comfort of home, I hope you enjoy :)


Homemade Toasted Gnocchi Recipe:


Yield: 2 Servings

Cook Time: 40 Min


Ingredients:

- 1 Large Russet Potato or 2 Small Russets

- ~3/4 Cup All Purpose Unbleached Flour

- 1 Egg Replacer

- 1 tsp Salt


Directions:

1. Wash and peel potatoes.

2. Cut into 1-inch cubes and place in a large pot of salted water, and bring to a boil.

3. Cook until potatoes are fork-tender and drain the water. Wash the potatoes using a fork or a masher.

4. Add the flour, salt, and egg replacer. (Make sure to let the egg replacer set up for a few minutes before using).

5. Combine until a dough forms. Let dough rest for 10 minutes, covered.

6. Roll the dough into a long “snake”. Cut off ½ inch pieces and roll into a small “worm” using a fork or a gnocchi board.

7. Bring a large pot of water to a boil. Add gnocchi and cook for 1-2 minutes or until they begin to float to the top of the water. Remove using a strainer. You can toast them in a small amount of oil for a few minutes, or you can toss with your choice of sauce immediately and serve, enjoy!


Tips/Tricks:

- You can also sauté the gnocchi in some olive oil after boiling them if you want crisper gnocchi!

- They should feel like a little pillow resting on your tongue when you are finished.
