Dark Chocolate Truffles w/ Sprinkles Recipe:
Yield: 24 Servings
Cook Time: 45 Min
Ingredients:
- 12 oz Dark Chocolate, Chopped or Bits
- 3 Tbsp Coconut Oil
- 1/3 Cup Coconut Cream
- 1 tsp Vanilla Extract
- ¼ Cup Coconut Sugar
- ¼ Cup Dutch Cocoa Powder
- *Sprinkles or Shredded Coconut (Optional)
Directions:
1. Bring a small pot of water or double boiler pot to a boil over medium heat.
2. Use a small bowl that you can hold over the pot of water w/ a potholder or oven mitt, if you do not have a double boiler.
3. Add chocolate, coconut oil, and coconut cream to bowl or double boiler and melt, whisking occasionally.
4. Once melted, remove from heat and whisk in the vanilla. Pour chocolate mixture into a shallow dish and place in the freezer for 20 minutes.
5. Remove from freezer and let warm up for a few minutes on the counter.
6. Use a small scoop, melon baller, or a spoon to portion out truffles. Roll each one into a ball, about 1 in big and place on a Silpat or piece of parchment paper.
7. Once finished, roll each truffle in your desired toppings.
(I did one set rolled in coconut sugar, one set rolled in shredded coconut, and one set rolled in cocoa powder. I topped each one with sprinkles as well), enjoy!
Tips/Tricks:
- If the mixture is too messy for you to work with, you can always wear plastic gloves to keep your hands clean.
- If you don’t have plastic gloves or prefer not to use them, you can always pour the truffle mixture into a lightly greased ice cube tray and freeze for 20 minutes as well.
