Dark Chocolate PB Banana Bites Recipe:
Yield: 2 Servings
Cook Time: 45 Min
Ingredients:
- 1 Medium Banana
- ¼ Cup Peanut Butter
- ¼ Cup Dark Chocolate or Dark Chocolate Melting Wafers
- 1 tsp Coconut Oil
- Sea Salt
- Sliced Almonds
- *Optional: Sprinkles or
Chopped Nuts for Topping
Directions:
1. In a small pot or double boiler, melt dark chocolate or wafers with coconut oil. Bring temperature of chocolate up to 120*F, making sure to not let the chocolate burn by stirring occasionally!
2. Slice banana into ¼ inch slices. Spread peanut butter onto one half of the banana slices.
3. Top the Peanut Butter slices with the clean slices and lightly press down. Place bites in freezer on a tray with parchment paper for five minutes.
4. Once chocolate is heated and melted, place in a small bowl and let the temperature of the chocolate cool back down to 90*F.
5. Once it reaches 90*F, you can pull the bites back out from the freezer and carefully dip them into the chocolate.
6. Place on parchment again and sprinkle immediately with almonds or sea salt.
7. Once finished, place bites back into the freezer and freeze for 30 minutes, enjoy!
Tips/Tricks:
Place bites in a freezer-safe container and keep on hand for snacking anytime!
