Avocado Sushi Bites w/ Tamari

Do you like the idea of sushi, however you're not very fond of raw fish? Avocado sushi bites may be the answer to all of your problems! Just kidding, but this recipe is really fun to make, and it makes eating "sushi" with your hands very exciting: 10/10 would recommend, enjoy! :)

Avocado Sushi Bites w/ Tamari Recipe:


Yield: 4 Servings

Cook Time: 45 Min

Ingredients:

- 1 Cup Sushi Rice (Cal Rose)

- 1 tsp Rice Wine Vinegar

- 1 Avocado, Sliced

- 1 Sweet Potato, Peeled, Cut into Rounds ¼ in thick

- 1 tsp Sea Salt

- 1 tsp Black Pepper

- 2 Green Onions, Sliced

- 1 Tbsp Vegetable or Sesame Oil

- Tamari or Teriyaki Sauce for Dipping

Directions:

1. Rinse sushi rice using a mesh strainer, cook rice according to package instructions. While the rice is cooking, bring a medium pot of water to a boil.

2. Add sweet potato slices to the water and cook for 8-10 minutes until the centers can be easily pierced with a fork. Once finished cooking, strain water and set aside.

3. Once sushi rice has finished cooking, place rice into a bowl, add the rice wine vinegar, mix using a wooden spoon or fork, let cool.

4. Slice avocado into slices and season with salt and pepper.

5. To build the sushi bite, place 1/4 cup rice on parchment or wax paper. Form the rice into a circle and pat down.

6. Place a sweet potato slice, avocado slices, and another sweet potato slice on top of each other over the rice. Using another ¼ cup rice, form the rice around the sweet potatoes and avocado slices, sealing the edges.

7. Heat a large skillet over medium heat. Add vegetable or sesame oil. Cook each sushi bite for 3-4 minutes on each side until golden brown. Serve with tamari or teriyaki sauce, enjoy!

Tips/Tricks:

- If the sushi bites start to stick, add more oil to the pan.

- Try not to move the bites until 3-4 minutes have passed on each side, this will form a crust and help the rice to stay together instead of “tearing” apart.
