Feta Quesadilla w/ Hummus & Avocado

This quesadilla is seriously amazing!! Mediterranean food is well-balanced and nutritious, and this quesadilla is proof of that! Not only is it delicious, it barely took any time to prepare. It's a win-win, enjoy!

Feta Quesadilla w/ Hummus & Avocado Recipe:

Yield: 2 Servings

Cook Time: 15 Min

Ingredients:

- 4, 8 inch Flour Tortillas

- ¾ Cup Hummus

- 1/3 Cup Feta Cheese

- 1 Avocado, Diced

- 1/8 Cup Cilantro, Chopped

- 1/4 Cup Broccoli Sprouts

Directions:

1. Heat a medium skillet over high heat. Place tortilla on skillet and spread hummus over tortilla.

2. Add some cilantro, feta cheese, and a few slices of avocado to each quesadilla. Fold in half and cook for on both sides until desired crispiness is met.

3. Top w/ broccoli sprouts and serve immediately. Enjoy!

Tips/Tricks:

- Be careful when spreading the hummus, not to burn yourself. If you have a hard time, you can spread the hummus on the tortilla before adding to the skillet.
